Jimbaran Puri, A Belmond Hotel, Bali invites guests to celebrate Indonesia’s legacy as the Spice Islands through Rempah-Rempah Indonesia, a one-night-only four-course dining experience at Nelayan Restaurant. Bringing together the nation’s most iconic regional flavours, cultural performances, and a curated beverage collaboration with East Indies, the event will take place on 23 May 2026, promising a sensorial journey across the archipelago and showcasing the depth and character of Indonesian gastronomy.
Set against the backdrop of Jimbaran Bay, the experience unfolds as a culinary journey through Indonesia’s diverse regions, where centuries of trade, migration, and cultural exchange have shaped a rich and layered gastronomic identity. Each course is thoughtfully curated to spotlight distinctive regional flavours, offering a deeper appreciation of the archipelago’s culinary heritage.

The experience unfolds with Otak-Otak Ikan, a Sumatran-style grilled fish mousse wrapped in banana leaf, delicately infused with aromatic spices and served with a sweet and spicy sauce. This is followed by Penyom Be Siap, a North Balinese speciality of shredded roasted chicken prepared with base genep, the island’s signature spice blend, enriched with toasted coconut and coconut milk.
At the heart of the menu is Ayam Bakar Taliwang, a celebrated dish from Lombok known for its bold, smoky flavours. The grilled spring chicken is marinated in sweet and spicy Taliwang spices, served alongside steamed rice, sayurplecing, melinjo crackers, and sambal Taliwang, a composition that reflects the intensity and balance of Indonesian cuisine.
To conclude the journey, desserts highlight the diversity of regional sweets with an Indonesian platter featuring Balinese Jaje Laklak, East Javanese Kue Wingko, and a refreshing homemade mango sorbet.

The dinner will take place at Nelayan Restaurant on Saturday, 23 May 2026, with the evening beginning at 6.30pm, priced at IDR 590,000++ per person for food only.
